The Aurora, commonly referred to as the Northern Lights, is a natural light display of dazzling colours that lights up the skies across our Northern Hemisphere. Although it may look and feel like the colours that a UFO might shine out as aliens approach earth or a witch casting spell in a Disney movie, there's a simple explanation. This phenomenon occurs when charged particles from the sun collide with gases in Earth's atmosphere, producing a dazzling array of colors that can range from greens and pinks to reds, yellows, blues, and violets. The most common color seen in auroras is a vibrant green, which is produced when solar particles interact with oxygen molecules at lower altitudes, typically around 100 kilometers above the Earth's surface. The Glacier lagoon in Iceland is close to highway number one, about 370 km (230 miles) east from Reykjavík and it is told to be one of the greatest wonders of nature in Iceland. This lagoon is a recent one, the result of a warming climate. The surface is at sea level and sea water flows into the lagoon at high tide. Huge blocks of ice constantly break off the glacier, Breiðamerkurjökull, and large icebergs float on the lagoon. The lagoon is not very wide but it is up to 250 meters deep which makes it the deepest lake in Iceland. - How to Experience Moana in Tahiti
I always thoughts adults who like watching Disney Movies were a little bit.. odd? Growing up, I loved The Little Mermaid and The Lion King, but the minute I turned 12 that all seemed a little passé. The launch of Brave in 2012 almost lured me back in- a wee Scottish lass would've helped my bruised ginger ego in childhood and I started to think I should really be giving Disney movies another chance. When Moana launched in 2012, and I watched it with a younger cousin, I was immediately entranced. And it wasn't just the beautiful animation, the cutesy elements of Pua the pig and the hilarity of Heihei the chicken's bulging eyes, the Rock's character's rap songs and interactive tattoos and, of course, the extremely catchy songs. It wasn't even the luscious hair of Moana herself. It was all of these elements, of course, but what really struck me was the storytelling of the film, the promotion of Tahitian culture and the legend that lies at the heart of the film. I truly didn't know a lot about this Island in French Polynesia, its history or culture, or even where to point it out on the map but Moana made me curious. Why were her parents so keen on her staying on the island to take over the role of chief of the village? Was Maui a true character in Polynesian culture? And most importantly, what sort of goddesses did (or do) these people worship and what stories make up their canon of legends and myths? I was worried to look too closely; to ruin the beautiful world that Disney had created, and afraid to find out it was all lies. But, I was happily proved wrong. Māui is a real trickster demigod prevalent in Polynesian legend. While Te Fiti (the goddess character at the centre of the first film) isn't real, she was certaintly inspired by Papatūānuku, the Earth Mother from Maori mythology, who, with her partner Sky Father Ranginui, created everything — kind of like the original power couple. I researched further, and found out that unlike some films that are not accepted by the cultures and people of which the film is inspired- most people from the Polynesian island concur that this film is a positive reflection, bringing island culture and customs into the mainstream . This all begs the question, can you visit Tahiti and engage in their local culture and have a positive impact? Can you have your own Moana experience without exploiting local traditions and customs for a quick Instagram post? The answer is Yes! Tahitians are renowned around the world as welcoming, kind and generous with explaining and immersing locals with traditions that have been passed down for thousands of years. Sail Like Moana on the South Pacific Ocean A huge aspect of both Moana and Moana 2 released in 2024, is the discovery of the ancient sail boats used by her people before they settled on the land. And in the films Moana and Maui sail on a traditional Polynesian double-hulled outrigger canoe called a wa'a kaulua. On which Moana learns to navigate her way across the ocean with the use of the cosmos and her divine responsibility of saving the day. And this ability to navigate the oceans is a skill renowned and revered in Polynesian cultures where sailors could set a safe course towards their destination using their knowledge of the stars, horizon and look and feel of the ocean swells. The best part is the depiction of these long range sailing canoes are quite accurate and real versions of them are available to rent across Tahiti. The tradition is perceived as a form of art, reflecting the Polynesian culture, history, and identity. From the selection of materials to the weaving techniques, every step is a testament to the skill and dedication of the artisans that produce the baskets. Personally, she's on of my favourite characters of the film- she's so in-tuned with nature that she knows the sea is calling Moana to fulfill her destiny. She teaches her the dance of their people and then she's off on her little side of the island just vibing. In Tahiti, this is a real dance called the 'Ori Tahiti and each element has a cultural symbol that represents the deep underlying connection between the islanders and the land they live in. Woven pandanus tree leaves represent nature and the land. Seashells are the ocean and its rich variety of marine life. Feathers, often worn in headpieces, symbolize the grace and beauty of the birdlife. And flowers are the vitality and joy of life inherent in every Polynesian. For those new to the vibrant world of Tahitian dance, workshops offer a fantastic starting point. Beginners can immerse themselves in the basics of Tahitian dance through various workshops tailored to their skill level . These workshops are designed to provide a supportive and educational environment where novices can learn the fundamental steps and rhythms. Workshops not only teach the dance but also often delve into the cultural significance behind the movements, providing a holistic learning experience. Here’s a list of beginner-friendly workshops to consider: Soul Sanctuary Dance: A community dance gathering focusing on freestyle movement. Watch a Real Tahitian Ceremony with Firewalkers Ceremonial wear and traditional festivals are evident throughout the two Moana films, and if you're looking to immerse yourself in a real Tahitian ceremony involving real firewalkers and chieftains then you should be planning to visit Tahiti at the end of the June and beginning of July. Each year, a firewalking ceremony signals the start of the traditional Heiva festival. The tahua , the Tahitian priest, prepares a long trench filled with a fire of wood and dried coconut palms covered with volcanic stones. The fire burns for between 24 and 48 hours, until the stones are white hot. Then the ceremony can begin. After a series of incantations, volunteers are invited to walk across the hot stones. Apparently, this serves to purify the body and the spirit. It probably also helps to warm up those volunteers who had cold feet!. The Umu ti, Polynesian firewalking, is an experience that's spiritual, cultural and physical. After a series of incantations, the master of ceremonies invites volunteers from the audience to walk across a path of white-hot stones. Swim with Manta Rays Throughout both films, but particularly in Moana 2, Moana is guided by manta rays that lead her to safety on her journey across the oceans. If swimming with marine life is something that's been on your bucket list then Tahiti is an ideal location to make your dreams come true! There are a range of experiences in Tahiti, depending on where you are, where you can find unique experiences to have a close encounter with these beautiful wild animals while snorkeling around a lighted raft. - This 'Somebody Feed Phil' episode Changed How I Want to Travel
Phil Rosenthal is the charming, dr ôle , innocuous host of his Netflix series Somebody Feed Phil that premiered on Netflix in January 2018. Through his food series, he combines his love of eating with a drive for connection, for immersion in culture and understanding of the history that's inspired restaurants around the world. I'm going to state here, plainly, that I was never a huge fan of Phil- sometimes I can find him quite grating. Maybe it's the cynicism in me to not trust someone who seems overtly humbled and awed by every single dining experience he finds himself in. There is that longstanding problem with all food presenters (I'm looking at you, Rick Stein)- when they have just taken a bite and dramatically react to the food with pure amazement without giving themselves time to chew. I mean, not every dish can taste that good. So, when my gourmet ex-restauranteur parents popped on Somebody Feed Phil earlier this year, I had taken out my phone to do some texting when my interest was piqued... If you haven't ever watched the show the TL;DR is Rosenthal tours a city- amazed and awed at every corner, and he also spotlights charities and non-profit organizations that operate in the region. The Episode It's Season 7, Episode 5 that premiered on March 1st 2024 that we were watching. Phil is in Dubai, most excited about what he calls 'the best burger ever'. He visits the Orfali Bros, Nihal's restaurant with Drew and Diana (Dubai influencers) and goes falconing. At 18 minutes, 32 seconds into the show- Phil visits Bait Maryam located in Cluster D by Jumeirah Lake Towers . Translated to House of Maryam, Bait Maryam aims to deliver the experience of eating a home cooked meal within the city of Dubai. The restaurant is named after the owner's mother, who presents welcoming, home-styled Levantine dishes. Customers can enjoy the sanctuary of the restaurant's cool dining room or sit in the glass-enclosed lakeside terrace. I read that the lunch 'dish of the day & soup' is a steal and dessert is a must. The Levantine food on offer has similarities with Egyptian, North African and Ottoman cuisine. The history of the food itself can be traced back to the early civilizations that flourished in the region, such as the Canaanites, Israelites, Phoenicians, and Hittites. These ancient cultures developed complex agricultural systems, producing grains, legumes, fruits, and vegetables that would become staples of the Levantine diet. Bread, olive oil, and wine were integral to the cuisine from the very beginning, and remain so today. It is particularly known for its meze spreads of hot and cold dishes, most notably among them ful medames, hummus, tabbouleh and baba ghanoush, accompanied by bread . They might not be complex dishes, but they are complex flavours and this is what Phil is about to embark on. The Chef The episode centres around the owner and chef of the restaurant, present in the episode alongside her own daughter, Nada. Two-time Michelin award winner Chef Salam Daqqaq is inspired by the food she grew up with, the diversity in the Levant and how it translates directly to the region’s culture and cuisine. In the episode you can almost immediately tell through her big eyes and nervous expression that this isn't just about food to her, it's about philosophy and a careful approach to cooking, and how food has shaped her identity as an immigrant in Dubai. Daqqaq was born in Palestine and grew up in Jordan before moving to Saudi Arabia as a young woman. While living in Saudi, she met her husband, settled down and had children. A few years later came a relocation to the US followed by a move to the UAE, where Daqqaq’s husband was setting up a business. Sensing that the UAE would be their base for the foreseeable future, Daqqaq felt it was the right time for her to do what had been in the back of her mind for many years. “My dream has always been to become a chef,” she says. “I taught Arabic cuisine in a cooking studio when I lived in Saudi Arabia. I then began a career, but had to put it on hold as I moved to the United States.” Daqqaq opened Bait Maryam in Dubai’s residential Jumeirah Lake Towers district in 2017. The Reaction Before Daqqaq prepares the food, we find that even the curtains in the restaurant belonged to her mother, "I feel she is around me" she says. Nada, the daughter, predestines the food's power "[Daqqaq] always says when she stirs the pot, it's as if she's not stirring the pot, it's Maryam. Honestly not just because it's our food, when you taste it you will feel some sort of energy." "Arabs are known for their spices," says Nada, "so we have a special dish for you today called kibbeh nayyeh. It's raw meat. She's from a village called Tarshiha, known for its raw meat so they want to bring that to you here." Daqqaq prepares the dish by washing bulgar, removing the water, adding spices like cumin, murdiqush (margoram), cloves and cinnamon all to mix for the kibbeh which is raw lamb from inside the leg, blended to a smooth texture in the machine. The dish itself looks like a wet mince, and doesn't feel like it's going to be anything special. "I'm gonna show you how it's done, because you gotta eat it the right way," says Nada. Phil is instructed to peel of a bit of bread, add a large onion slice and eat the kibbeh in one bite. And he does, and then... he goes quiet (for once.) He smiles, hesitates and asks for Phil smiles, closes his eyes and says, "I don't know what happened but when I bit into this- I'm not sure it..." There's a catch in his voice, like the start of a cry. He ignores Nada's question: " Where is it taking you ?" And continues to hesitate. Later he says, "There are some moments that are transporting. And I'm not just saying to another land like Dubai I'm saying to another time and place and human being." Back in the restaurant he says, "I have to tell you something it's so crazy... I feel emotional." Daqqaq feels Maryam in the room, saying, "Always when I make it, I feel my mom..." Sniffling, Phil says "it's magic..." Daqqaq says, "I put all my love all my heart in the food..." He sighs, as if grating himself, "I swear I was going to say that but I didn't want to make it sound too..." He doesn't finish the sentence, but the word might be 'too saccharine' Later on he says, "It doesn't happen all the time, certain dishes are delicious and that's the bottom line .... but now we're talking about another dimension..." Why it Changed How I Want to Travel This reaction still give me goosebumps no matter how many times I've watched it. And it really isn't too saccharine or self-aggrandizing or insincere, it feels special. And that's why it's changing how I want to travel this year. I've had tasters of experiences like this myself- eating $5 ramen in Kyoto's famous Men-ya Inoichi Hanare or a ham and cheese sandwich in Madeira, a ravioli in Lake Garda. Hell, I've even had it with a Yo!Sushi temaki once or twice. But I've never been transported, I've never cried, I've never felt like I've partaken in a culture's timeless heritage after having a single bite of a single dish. So, travelling with the intention of seeking out immersive food experiences is my new thing. Food experiences that not only bring you the sense of the destination you're in, but also to the lives and histories of the immigrants who make up the backbone of that very same destination.
